
Baking is therapeutic. Other than taking your mind off the troubling concerns, the anticipation of the baked beauty even as the kitchen buzzes with the heavenly aromas is enough to soothe one’s frayed nerves.
Precisely what i did yesterday noon as I spent a good part baking these delightful cookies. It calmed me instantly and very soon i was humming !!
They had a light lemony flavour, and the buttery crunch hid the number of cookies (sadly not the calories) tucked in !
The recipe from here was easy to follow :-
What goes—
- Powdered sugar – 100 grams
- Butter (softened) – 70 grams
- Zest of lemon – 1 lemon
- All purpose flour – 110 grams
- Milk – 1 tbsp
- Food colour (i used orange red) – 1 tsp – as required
How:-
Keep the baking tray greased & set aside. Sift the powdered sugar into a large bowl. Add the butter and stir it in until the mixture is smooth. Add the zest of a lemon and stir in to the mixture.
Sift the flour into the bowl and mix well. Add milk
into the mixture.
Divide the dough in to half and add the food color in to one part.
Wrap both of them separately in food wrap. Put them in the refrigerator for 30 minutes.
Sprinkle flour onto clean surface. Use a rolling pin to roll the plain dough as shown below. Roll out the coloured dough until it is the same size.
Brush the plain dough with a little water. Put the coloured dough on top of the plain dough.Cut the edges of the dough straight.
Roll it up from one long sidelike a log. Wrap it in food wrap.Put it in the refrigerator for 30 minutes.
Preheat the oven to 175C. Take the dough out of the refrigerator.Cut it into 1/4 inch slices. Put them on the trays .
Bake for 10-12 minutes.Let it cool and bite in to melt-in the mouth goodies! The missing ones on the tray were popped in to the mouth straight from the oven , burnt toungue not-withstanding—:p
