
The recipe saw a few minor tweaks from my side in terms of shape and the flour mix – i used a mix of wheat flour & plain flour and added a dash of mint leaves to the garlic butter; made the dough in to rolls as well as bread and baked them in square cake tin(instead of the round tin as used by her)
What goes:-
For the Dough:
- Flour- 400 g ( a mix of wheat & plain flour)
- Dried yeast- 3 tsp
- Warm Milk – 1/2 cup (for activating yeast)
- Salt- 1 tsp
- Sugar- 1 tbsp
- Olive oil- 2 tbsp
- Warm Water- as required
For the Garlic Butter:
- Butter- 100 g( at room temperature)
- Garlic – 3 (grated)
- Salt – a pinch
- Pepper – to taste
- Fresh coriander & Mint- 1 tbsp (finely chopped)
Method:
Activate the yeast by soaking in warm milk with little sugar. Once it becomes frothy mix all the ingredients for the dough and add enough water. Knead it to a dough and then add the oil for a smooth and elastic dough.
Place the dough in a clean, oiled bowl, cover it with a cling film and allow it to rise for about 1 hour or until doubled in size.
Meanwhile prepare the garlic butter by mixing all the ingredients together and set aside.
(It gives me immense pleasure to see the dough double in size—- i could’nt resist taking a click )
I made one part in to rolls and the other as bread—
For the rolls:-
Roll the ball into a flat rectangle (it was a circle in my case) , spread the garlic butter . Roll it as shown and make cuts at equal intervals.
Now you can bake this in a square cake tin (u can also use a loaf tin or a round cake tin).
Grease the tin, and arrange the rolls inside without touching each other. Apply more garlic butter on top of the bread. Sprinkle some sesame seeds. Cover the tin and leave it to rise for another 30 minutes.
Meanwhile preheat the oven for 180 degree celsius. Bake the bread for about 20 to 25 minutes or until golden brown on top.
For the other part roll the dough in to an oblong shape. Make serrations diagonally without cutting in to the dough completely. Apply the garlic butter on top and sprinkle sesame seeds and nigella seeds (optional). Allow it to rise and bake !
Serve the bread warm with curries and salad or just by itself.
