For the filling, roughly mashed chickpeas along with onions, garlic & bell pepper fused in with Zesty Mediterranean flavours like dried oregano & rosemary to make a flavorful blend. This was further pepped up with fresh greens like mint & coriander and a dash of lemon juice along with almonds & sesame seeds. This mix was perfect as a filling for the tasty parathas .
What goes :-
For the filling—-
- Chickpeas – 1 cup-(soaked & pressure cooked) /if using canned, drained & rinsed & roughly mashed
- Onion – 1 (small) – finely chopped
- Green Pepper – 1/2 – finely chopped
- Garlic – 1 to 2 pods – finely chopped
- Mint Leaves – a fisful – roughly chopped
- Fresh Coriander leaves – a few sprigs – finely chopped
- Green Chilli – 1- to taste – optional
- Seasonings – (Dried Rosemary, Dried Chives, Oregano, Red Chilli Powder mixed in equal quantity) – 1 to 2 tsp of the blend – to taste
- Lemon – a dash of lemon juice
- Sesame Seeds – a few sprinkles
- Powdered almonds – little – optional
- Salt – to taste
- Wheat Flour – 1 cup
- Water – as required
- Oil – little
