School Vacations are just around the corner and my daughter is on a hyper-active mode. Extra-curricular activities not withstanding she is perpetually looking out for things to do (read mischief).

Today she wanted to eat something with eggs and offered to help me out (read mess up the place , but it’s welcome – anything to keep her occupied !).
She loves to help me out in kitchen, especially while baking- greasing tins, measuring & mixing up ingredients , scraping out the flour mix to greased tins and helping out in preheating oven are her areas. We made Banana-Oatmeal-Peanut Butter Bake, which i will post shortly !
Today’s dish is practically a very easy to make recipe and my 7 year old daughter was completely in to it except for the chopping & frying part . These fried sandwiches is generously dabbed in butter & cheese and finally fried – so a statutory warning is in place – this one is heavily loaded and the taste is a knockout ! 



The pictures are not  that great as I had to literally pull it from my kids mouth to take the clicks !!


What goes:-
  • Bread – 4 slices
  • Cheese Slice  – 2
  • Egg – 2
  • Onion – 1 (small – finely chopped)
  • Coriander leaves – a small bunch (finely chopped)
  • Mozzarella Cheese – grated -as required
  • Butter – as required
  • Oregano – a few shakes
  • Pepper powder – as required 
  • Green Chilli – 1  (finely chopped) – i did not use – optional
  • Salt – to taste


How:-

Butter the bread slices and place a cheese slice between the breads. Press it well and halve diagonally.
Break eggs and whisk it well – mix in onion, coriander,oregano, chillies, cheese and season with salt & pepper.



Soak the halves in to the beaten egg allowing a generous coating on both sides.



Fry in butter/ghee on  a pan till both sides are golden brown. Serve hot
