This lovely stuffed braided bread from Aipi caught my fancy and i made it sometime back ! Besides a few tweaks in terms of flour and filling, i stuck to the recipe. Thanks Aipi- we enjoyed it immensely…


Since the bread with delicious stuffing was from whole wheat flour, it was to a great extent guilt-free indulgence !



What goes :-


For the Filling

  • Boiled Potatoes – 2
  • Fresh Green Peas – 1 cup
  • Coriander Leaves- for garnish
  • Peanuts – 1/2 cup (optional)
  • Onion – 1 (finely chopped)
  • Fennel Seeds – 1 tbsp
  • Green Chilli- 1 (to taste)
  • Salt – to taste
  • Turmeric Powder – 1/2 tsp
  • Raisins-  a few
  • Cashew (broken ) – a few
  • Maggi tatse maker – 1 tbsp
  • Butter – 1 tsp
For the Dough:-
  • Whole Wheat Flour (atta) – 2 1/2 cups
  • Dry Yeast – 1/2 tbsp
  • Oil – 2 tbsp
  • Sugar – 1/2 tbsp
  • Salt- 3/4 tsp
  • Warm Milk- 1/2 cup + as required for brushing
  • Warm Water – as required

For Topping:-

  • Sesame Seeds
How:-

Activate the yeast by mixing milk and sugar with yeast; allow it to become frothy ! This takes a few minutes , now it is ready to go in to the flour.


In a large bowl add the flour, make a small well and add the frothy yeast little by little. Combine salt and oil and start kneading. Make it to a smooth soft dough and use warm water if required to bind.


In a well oiled bowl, place the dough. Keep it covered with a damp kitchen cloth in a warm place and allow it to double in size.


Once it doubles– the dough is ready to rock !



Prepare the filling with choice ingredients. Here’s how i made it

In a kadai heat the butter and let the fennel seeds splutter. Stir in the garlic pieces & the green chillis . Let them sizzle for a while before adding onions. Add green peas to the translucent mix and cook for a while. Now add the taste maker and salt. 


Finally add the mashed potatoes along with raisins & cashews. Cook till the flavours blend. Garnish with coriander leaves. 


Now deflate the dough gently and knead for a minute. Spread it in to a oval/oblong shape and leaving a few inches from each side, place the filling in the centre. 




Make slanting cuts as shown at either sides at equal distance. Let there be same number of strips on each side. 



Leaving the end closest to the filling attached, start braiding the strips over the filling tucking in the loose ends!



Cover the bread again with wet cloth to avoid drying and let it again rise for 30 minutes or so !
Preheat the oven to 190C. Brush the bread with milk and sprinkle sesame seeds on it ! Let it bake for 15-20 minutes till the top gets all golden crusty-



Allow it to cool – Slice n Serve

    This braided bread had caught my fancy the moment I laid my eyes on it. I had also followed Aipi's recipe to the T. Yours has come out so crisp and looks so perfect :)I am in love with the stuffing too !!!
