This is my 100th post- yay !! I have also completed 6 months of blogging . Never thought that what started as a distraction would become a passion !

Now to my post, these days i cook more of greens and i totally love amaranth greens. Known as Mulaikeerai in Tamil, these leafy foliage are a storehouse of a whole lot of nutrients. 




This stir fry is my favorite and goes well with rice as well as Indian flat bread like phulkas . I usually add a cup of Moong dal (lentils) but today the greens were cooked with black eyed beans and was relished by all !





What goes:-

  • A bunch of Amaranth Leaves & tender stems – washed & chopped
  • Black eyed beans – 1 cup ( pressured cooked till soft)
  • Garlic Cloves – 3 to 4 (finely chopped)
  • Green chilli- 1 to 2 (to taste)
  • Salt – to taste
  • Mustard Seeds, Cumin seeds – 1 tsp
  • Curry leaves – a few
  • Turmeric Powder – 1 tsp
  • Oil – 1 tsp
For Garnish :- (optional)
  • Grated Coconut – 1 cup
  • Grated Green Mango – 1 cup – to taste





How:-


Wash and soak the black eyed beans in water for 5 minutes. Drain and pressure cook with required water till soft (usually takes 3 whistles) …keep aside. 



Heat oil in a pan add mustard seeds, cumin seeds and let it splutter. Add curry leaves green chillis and garlic and saute for some time. Now add the onions and as it turns translucent, add the cooked black eyed beans and stir fry for some time.




Now add chopped amarnath leaves, Turmeric powder, salt and little water. Mix well and let it cook well under a closed lid till done.




Finally garnish with grated coconuts & mangoes.



Serve hot !

    Amaranth leaves are mulaikeerai, eh -Never knew that although I've had it every single day when I lived in my parent's house! I wonder if I can get these here??! Have settled to amaranth cereal – Wholesome stuff!
