Remember my post on Chickpea Patties – the blend of legumes and spices was a real treat to the senses.The unused portion of the chickpea mix was refrigerated overnight and used as filling for the parathas. The following day saw a very tasty lunch that was well enjoyed by kids n hubby ! And parathas need not be dripping with ghee, a few drops of olive oil does a fine job of producing a similar effect and is practically guilt free indulgence ! For the filling, roughly mashed chickpeas along with onions, garlic & bell pepper fused in with Zesty Mediterranean flavours like dried oregano & rosemary to make a flavorful blend. This was further pepped up with fresh greens like mint & coriander and a dash of lemon juice along with almonds & sesame seeds. This mix was perfect as a filling for the tasty parathas .


What goes :-


For the filling—-

  • Chickpeas – 1 cup-(soaked & pressure cooked) /if using canned, drained & rinsed & roughly mashed
  • Onion – 1 (small) – finely chopped
  • Green Pepper – 1/2 – finely chopped
  • Garlic – 1 to 2 pods – finely chopped
  • Mint Leaves – a fisful – roughly chopped
  • Fresh Coriander leaves – a few sprigs – finely chopped
  • Green Chilli – 1- to taste – optional
  • Seasonings – (Dried Rosemary, Dried Chives, Oregano, Red Chilli Powder mixed in equal quantity) – 1 to 2 tsp of the blend – to taste
  • Lemon  – a dash of lemon juice
  • Sesame Seeds  – a few sprinkles 
  • Powdered almonds – little – optional
  • Salt – to taste
For the dough:-
  • Wheat Flour – 1 cup
  • Water – as required
  • Oil – little
How:-

Mix the flour & water as required for the flat bread – add a little oil and knead well for a fine dough !! Set aside. In a bowl mix all the ingredients for the filling and let it rest in the fridge for 10-15 minutes before using them either for patties or for parathas. 


Taking a small ball of the dough and make a pocket for the filling, stuff the required mix, close it and roll out flatly. Let it cook on a non stick pan / griddle pan adding a few drops of olive oil. 



Enjoy the parathas with pickle/raita/ketch-up/salad or any choice accompaniments
