What is the best way of making my daughter eat food she does not like?? Simple- Camouflage it in the food she likes !! I know a whole lot of mothers will nod in agreement to the camouflage routine – to make our kids eat healthy we don our creative caps daily ! Since my daughter is not too fond of the lentils, I ditched the dal routine and hopped on to a nice curry like dish with scrambled eggs!
Voila – my kids loved it and even my 2 yr old son was happily munching away rotis with the lentils !

The best thing about this dish was I used cooking olive oil to make it and so was not soaked in butter/ghee and still tasted divine !

What goes:-

  • Green Gram lentils – 1 big cup (soaked for an hour and pressure cooked till soft)
  • Eggs – 2 or 3 (substitute with crumbled paneer/tofu if you want)
  • Cooking Olive Oil – 1 to 2 tbsp
  • Fennel Seeds – 1 tbsp
  • Garlic Pods – 3 to 4 (diced)
  • Curry Leaves – a few (chopped)
  • Green Chillis – 2 – to taste
  • Salt – to taste
  • Coriander leaves – a handful (for garnish)

How:-

In a kadai, add the olive oil and as it warms ,let the fennel seeds crackle up; at this point add the garlic, green chillis and curry leaves and stir for a few minutes.
(The heavenly aroma of garlic being roasted makes my hungry daughter scamper to the kitchen and drool all over —)
Now add the onions and saute well. Break over the eggs and scramble them fine. Season with salt and pepper (optional)….

Now add the cooked lentils and mix well. Garnish with chopped coriander !

Enjoy the dish with phulkas or rice ! I liked them as a sandwich filling too !
