One of my favourite desserts is Gajar ka Halwa, and I can dig into it anytime. Of late I had this craving for eating gajar ka halwa but was too lazy to get Khoya (Milk solids). I saw an opened tin of Milkmaid (condensed milk) in the fridge with almost half its contents. Ditching the ides to get khoya, I set out making gajar ka halwa with the available ingredients. It turned so lip smacking that I for sometime forgot to count calories and tucked into this pure delight!




So here goes my recipe for yummy carrot halwa——

  • Carrots (medium sized) – 10 to 12
  • Milk – 500 ml
  • Milk Maid (Condensed Milk) – 1/2 tin (about 200g)
  • Ghee (Clarified Butter) – 5-6 tsp
  • Cardamom Powdered – 1-2
  • Cashewnuts,Raisins,Almonds,Pista  – handful (broken)
Method:-


Grate the washed and cleaned carrots and set aside.

In a kadai or thick bottomed pan, heat 4-5 tsp of ghee and saute the grated carrots for a few minutes. Now add the milk and the milk maid and cook the carrots till they are well cooked and the milk evaporates.


 It took about 12-15 minutes during which I busied myself in sauting the broken nuts and raisins with a tea spoon of ghee in a separate kadai till golden brown. 


Add sugar and powdered cardamom to the carrots and mix well, let the mix simmer while stirring ocasionally for another 10 minutes or till the halwa becomes quite dry.



Finally add the nuts and raisins and let it cook for 2-3 minutes before taking off flame.

 Serve it hot or cold
An Interesting combination is Hot Gajjar Ka Halwa with Vanilla or Butterscotch Ice cream
