Finger Millet or Ragi as it is widely known is an annual plant widely grown as a cereal in the arid areas of Africa and Asia (Source: Wiki).
Commonly consumed as porridge(kanjee), ragi also goes in to the making of flatbreads (rotis), dosas(pancakes), ragi balls, laddus, etc., 
Ragi is not only nutritive and very healthy but quite filling too !


My hubby got 2 packets of Ragi flour which was asking for attention quite some time now. The Ragi flour can be added to a variety of ingredients for the batter – this time around I made dosas much like our traditional dosa replacing Rice with Ragi Flour.Urad Dal was soaked and ground to a fine mix along with fenugreek seeds. This then was mixed with Ragi Flour, roasted semolina and ample water to make crispy crunchy dosas.


You can ferment the batter for a few hours or make dosas immediately as  I did !


My son enjoyed it with the left over sugar syrup from Jangris and my daughter relished Ragi Ghee Roasts with Tomato Sauce & chutney !



What goes:-


For the Batter:-

  • Ragi Flour – 2 cups
  • Urad Dal – 1 cup 
  • Roasted Semolina (Rava) – a fistful ( this gave a crispy edge)
  • Fenugreek Seeds – 2 tsp
  • Salt – to taste
For the Garnish:-
  • Onion -1 (large – finely chopped)
  • Gren Chillis- 2 to 3 – to taste (finely chopped)
How:-


Cut the ingredients for the topping; you can add choice ingredients like coriander leaves or some nuts
Soak the Urad Dal with the fenugreek seeds for 6 hours. Grind it to a smooth paste with enough water.


Add Ragi flour, roasted semolina, salt to the urad paste and mix well with enough water for a runny consistency.



Grease the iron griddle lightly (or non-stick pan) and let it heat up; pour a ladle full of batter and spread across as shown. Sprinkle the choice toppings,pour little oil around for it  to cook and get crispy.



Gently flip it and let the toppings scorch under the heat for a while. 
Fold & Serve hot with accompaniments of your choice.

    I have seen the recipe and preparation before. However, the presentation was good. helped to visualize the steps.
