My daughter spouts 3 words every day after school and without fail . What’s special amma?  After a long day in school, she looks forward to something that satiates her completely. Some days she is happy with a cup of complan and a bowl of corn flakes. On other days she specifically asks for her favourite. Of course, it goes without saying that anything fried,chocolate-y and junk-y gets her elated nod of approval.Mostly,I make do with a healthy twist to the regular dishes and top it with a liberal dash of grated cheese.And that more often than not gets a huge smile from her.Precisely what these pancakes got for me – a big smile. Of course, the grated cheese did it’s part. But the deal clincher was the sweet corn in it. 



Corn an absolute powerhouse of vitamins,minerals & anti-oxidants is an absolute favourite with my folks. Pop/boil/grill it’s a sell-out ! Rich in fibre, corn is also a versatile ingredient. Right from the production of alcohol to margarine, sugars to synthetic fibers, corn is a very important food crop.

  • Do you know that corn like all other cereals is a kind of grass ?
  • Also an ear of corn contains an average of 800 kernels !

This month’s blog hop sees me paired with Nupur of UK Rasoi. With a stunning array of recipes as well as a whole lot of health tit-bits, the blog was a pleasure to prowl.Check out her baking tips & healthy bi(y)tes ! Her recipe of Chilli Corn Cakes , caught my eye. I gave the recipe a healthy twist by shunning all-purpose flour and using Wheat Flour. Also, the eggs in the recipe was replaced by one boiled & mashed potato.My kids loved it !



What’s in it :- (Makes: 8 ) – Adjust the seasoning to taste

  • Corn Kernels – a generous fistful
  • Whole wheat Flour –  1 large cup (approx 125 grams)
  • Onion 1 – finely chopped
  • Green chillis – 2 -to taste -finely chopped
  • Coriander leaves – 
    a few sprigs – finely chopped  
  • Potato – 1 (boiled & grated)
  • Milk – 4 to 5 tbsp
  • Olive oil – 2 to 3 tbsp
  • Black Pepper – 1 tbsp
  • Dried Chives, Thyme ,Oregano – 1/2 tsp each
  • Salt to taste
  • Water – as required
For Cooking :-
  • Sunflower oil – as required for cooking
Suggested Garnish :-
  • Grated Cheese

Here’s How :-


Dump all the ingredients except water in a bowl and mix well.Tip in water little by little as required for the mix to become a pancake batter consistency.Keep aside for a few minutes for the flavours to blend & mingle. Grease a skillet or non stick pan, and dump a ladle of the batter over medium flame. Spread the batter in round shape and cook it uncovered till the bottom starts crisping up.if you want, you can tip oil around the sides of the pancake.Flip the side and cook until crisp and golden.Enjoy with Tomato Salsa or any other choice accompaniment.
