My daughter is ecstatic – she made her very first batch of cookies, save for some supervision while handling the oven and the electric hand mixer she was practically on her own ! She is usually hands on when I am in the kitchen badgering me to give her some work or the other especially while baking , but today she insisted on making the hearth her den. I watched very proudly as she came around the kitchen like a pro, gleefully mixing the ingredients and plopping it on the baking tray. Since she was the boss today, the sizes of the cookies are an assortment of what her heart dictated. But they were yummy, crispy n delightful.



Of course the recipe itself was very simple for her to comprehend and did not involve extensive preparation ! The tea-time was a happy mother-daughter bonding time !

Ingredients
  • All-purpose flour – 250 – 260 gms approx
  • Baking soda – 1 tsp
  • Butter, softened – 115 gms
  • Egg – 1
  • Sugar – 125 gms
  • Ripe bananas – 2 small ones – mashed
  • Vanilla essence – 1 tsp
  • Salt – 1/4 tsp
  • Nuts/choco chips  – a fistful- your choice ( i used little almonds n pistachios)

How:-


Preheat oven to 350ºF/180ºC. Using electric mixer, beat butter and sugar until they are light and creamy. Beat in the egg and vanilla until well combined. Tip in the mashed bananas, flour, baking soda and salt. Stir until just combined.Add nuts or choco-chips if you wish for and mix well. Drop a spoon of dough per cookie in to the cookie sheet keeping them apart so that they can rise. Bake for about 15 minutes or until golden brown. Allow to cool.
