Last fortnight was very hectic. I managed to cook some dishes and also had my hubby and inlaws chipping in with some of their dishes…. One of them is Tava Roast Brinjal which my hubby made.

The snack is a perfect combo with a cutting chai on a mushy saturday afternoon or a lazy sunday morning.

Ingredients —- Large Eggplants (Brinjals), Corn flour/Refined flour, salt, red chilli powder, garam masala, turmeric powder, aamchur powder (dry mango powder)

Cut the brinjals as shown and mix the other ingredients according to your taste

Now spread this mix on the brinjals and place them on a shallow frying pan. add some butter/ghee/oil and let them slowly cook

Take them out of pan once they become golden brown or till they appeal to your crispier sense.

Enjoy it with ketchup

You can try some variations on the mix of the ingredients. Make it simple with red chilli powder and salt and so on—- Make it and keep me posted on the variations
