The one thing that bothers me much is wastage and when i saw a clump of Leek and Celery leaves that was beginning to turn unusable i almost went in to a frenzy. Thankfully a good portion could still be recovered .


My daughter had wanted Puris with Potato Masala for lunch and i immediately warmed up to the idea going green with the puris . This combined with the goodness of carom seeds (ajwain) in the dough made the green puris much liked. With the patato masala  the puris was a hit  !



so here’s my recipe:- 


Ingredients:-

  • Wheat Flour – 1 cup
  • Celery leaves ( handful of all the greens)
  • Leek leaves
  • Coriander leaves
  • Carom seeds (ajwain) – 1 1/2 tsp
  • Salt – to taste
  • Sugar – 1/2 tsp (optional)
  • Asafoetida – a pinch
  • water – as required
  • Oil – a little
How:-

Wash the leaves well, roughly chop and grind it to a paste with little water.



In a mixing bowl add the wheat flour along with the ground paste. Add the carom seeds, salt, asafoetida and knead it well with required water. Add a little oil to make it to a soft dough.


Take a small quantity and spread it across dusting with flour if necessary.




Deep fry the puris till crispy and serve hot.




I also made phulkas with the dough. Sadly it vanished before i could take pictures !


Potato Masala :-


A very lovely accompaniment to puris and rotis, potato masala in a semi solid form  is also  very simple to make! I have also blogged about this in one of my earliest posts 


Ingredients

  • Potatoes Boiled – 2 to 3 (peeled and mashed ) , 
  • Onions -2 medium ( finely chopped ), 
  • Ginger – 1 small piece,
  • Green chillis 2 to 3 – to taste,
  • Curry leaves – handful, 
  • Mustard, cumin seeds – 1 tsp
  • Turmeric powder –  ap inch or two,
  • Oil/butter – 1 tbsp
How:-

In a wok add some butter/oil and allow mustard and cumin seeds to splutter. Now add some curry leaves and ginger and stir it well with the onions. Add a pinch of turmeric powder and stir till mix turns light brown. 

Now pour some water and salt and once it starts boiling add the mashed potatoes and allow it to simmer till it gets the required consistency. Add a dollop of butter and the dish is ready !!!!

    I would not even mind the deep fried stuff as it is packed with the healthiest greens and carom is my favorite. Brillinat use of greens Priya,and the aloo masala is the perfect combination to go with these pooris:)
