There are days when i am buzzing with ideas and my head is literally swamped with dishes to make, re-invent or innovate ! Today was one of those days and i had a few things in mind. Not sure which idea to give shape to, I left the choice to my daughter who had come back from school a little while ago. She voted for the cookie idea and these yummy little things were born ! A mix of melted butter & vegetable oil was used in the dough and I replaced sugar with Palm Jaggery (panai vellam kalkandu) ,it added a nice touch to the taste.  Call them as biscuits or cookies, these crunchy-munchies got a hearty welcome from my folks !



What goes:- (Makes 15 medium sized biscuits)

  • Ragi Flour (Finger-Millet Flour) – 75 gms
  • Wheat Flour – 75 gms
  • Rolled Oats – 50 gms
  • Palm Jaggery Sugar – 100 gms
  • Melted Butter & Vegetable Oil – 60 gms or as required
  • Milk – 3-4 tbsp
  • Salt – 1/4 tsp
  • Baking Powder – 1 tsp
  • Green Pistachios – as required (optional)
How:-

Powder the oats and the palm jaggery to a fine powder.



In a mixing bowl add the ragi & wheat flour along with salt and baking powder. Sieve the oats-sugar mix and add it to the flour mix.



Add the milk and the butter-oil combo little by little to make a nice dough. I rested the dough in fridge for 10 minutes by keeping it in a food wrap.


Preheat the over @ 175C. Grease a baking tray and put a dusted parchment paper on it.
Take a small ball and flatten /spread it gently and press a pista to it. You can also press a fork to create a lovely design on the biscuits .Finish the dough in the said manner.


Bake it for 10-12 minutes or until it is done.



Enjoy with a steaming cuppa !

    The unrefined Palm sugar is in the form of hard blocks of dark brown sugar known as karupatti,
    The refined version is panam kalkandu which is crytallised granules !!
