A recipe has my attention when the ingredients in it are minimal, involves hassle free & effortless cooking and most importantly vouched to taste divine ! All these attracted me to this pudding @ Sanctified Spaces.

The pudding received a hearty welcome from kids & hubby. I assembled & allowed it to sit in the fridge overnight. What came after the resting period was a delectable treat !

A pudding thoroughly enjoyed !

Ingredients
- Vanilla Custard powder-3 tablespoons
- Krackjack biscuits – as required
- Milk-1/2 litre
- Sugar-3 tablespoons
- Coffee decoction to dip biscuits – 1/2 cup as required
Garnish/Toppings :- (any or all – as required)
- Chocolate Syrup/Chocolate Shavings/Cocoa Powder/Nuts
Here’s How :-
Take 1/4 cup milk and add 3 tablespoons of custard powder and mix well. Boil remaining milk with 3 tablespoons of sugar. Remove from flame, add the custard powder and let it simmer for a while till it thickens. Stir continuously to ensure custard does not get charred. Take it off flame when the custard is ready.Set aside till warm.
For the decoction , bowl a cup of water and drop 1-2 instant coffee powder sachets. Alternatively, if you have a Coffee Filter make a thick decoction using coffee powderand set aside.
For the layers of the pudding , grease the square tin/bowl lightly or alternatively line it with a layer of cling film and start laying down the biscuits dipped in coffee decoction. The biscuits need to be in the coffee mix only for a few seconds else it will become too soggy.Next take a generous amount of custard and spread it on top of the biscuits.Repeat again with coffee soaked biscuits – build 3-4 layers good enough for the shape to be retained.

Top it with Chocolate Syrup/Chocolate Shavings/Cocoa Powder. Refrigerate for three to four hours. Slice & Serve !

Useful Pointers & Serving Suggestions

Do not soak biscuits for more than a few seconds, otherwise it will become soggy

For Coffee Decoction use Instant Coffee Powder or Filter Coffee

To know whether the custard has thickened adequately,see whether it coats the back of the ladle/spoon while simmering
|

Before serving, take it from fridge and let it rest for 5-10 minutes before digging in
|
