A departure from routine is soooo welcome even if it is for a measly 36 hours ! Taking a day and a half break from school & work, we set out to the picturesque Kolli Hills and just soaked up the scenic beauty and the still unexploited mountain range. The water falls, the view point showcasing the entire place,botanical garden,a Shiva temple built in the 1st or 2nd century had us gaping in awe at nature at its very best ! If I had my way, I would just laze and potter around the stunning place not wanting to come back but was snapped back to reality by hubby dearest :P However, am glad to have snatched some lovely memories with the trip etched in my mind as panoramic images and yup we also snatched sore throats & running noses ;)


Today’s post is the yummy butter cookies scented with vanilla and sweetened with honey. 



Cooking from Prabha’s space @ Prabha’s Cooking for Radhika’s final installment of this year’s  Blog Hop Wednesdays , these cookies immediately caught my attention because of the simplicity of ingredients- all of them were available in the pantry and it involved fuss-free baking ! Check out prabha’s spae for many more hearty dishes from around the world!



 My daughter who saw me beginning to shape the dough went ballistic with the cookie cutters and gave the dough many shapes :D



Ingredients:

  • Butter- 225 grams
  • All Purpose Flour-250 grams (sifted)
  • Honey- 90 grams
  • Chopped Cashews- 150 grams
  • Vanilla Extract-2 tsp
  • Salt-1/2 tsp
Method:

In a large bowl,beat  butter until creamy with mixer at high speed.Add honey & vanilla and beat until well blended. 



Add flour,cashews & salt and blend at low speed until dough forms.Cover the dough with plastic wrap and refrigerate it for at-least 1 hour.



Preheat oven to 325 F / 162 C and line/ grease the cookie sheet.With lightly floured hands,shape the dough in to small sized cookies or use a cookie cutter for the desired shape. Place them about 2″ apart from one another and gently press a floured fork across the top on each one of them. Bake until golden,18 to 20 min.With spatula,transfer cookies to wire rack to cool.Repeat the same method with all the dough. Enjoy !
